Rallis Ice Pressed® Extra Virgin Olive Oil is crafted from consciously farmed Greek olives grown in sunsoaked groves in Messinia, Greece. Pressed in small batches at exceptionally cold temperatures, Ice Pressed® is made to preserve the olive’s natural flavour, aroma, antioxidants, and naturally occurring polyphenols.

As for Ice Pressed® vs. Cold Pressed, this really comes down to philosophy.
"From day one, we've believed that both the fruit and the oil should be exposed to as little heat as possible throughout production.
Most premium olive oils today are not produced with traditional presses. They're mechanically extracted for a plethora of reasons including increased quality, yield, eliminating contamination...etc. The term "cold pressed" has remained because consumers understand the term, but in modern production it generally refers to extraction being carried out below 27°C (80.6°F). As you also know I have shown several videos over the year showing that simply is not true.
For many mills and more importantly farmers, maximizing yield is an important economic consideration. This is their ONLY point of sale. Warmer malaxation (the slow, continuous mixing or kneading of crushed olive paste that merges tiny oil droplets into larger pools, making it easier to extract the oil) temperatures reduce the oil's viscosity, allowing tiny oil droplets to combine more easily and increasing extraction yield...in laymens terms...mo heat, mo oil, mo money. The trade-off, and validated in numerous scientific studies, is that higher processing temperatures can reduce volatile aroma compounds (taste) and accelerate the loss of valuable phenolic compounds and antioxidants (oxidation and shelf life).
Our philosophy has always been different. If "cold pressed is better than non cold pressed...then it would stand to reason that Ice pressed is even better!
With our Ice Pressed® process, we aim to keep the olives and olive paste at approximately 7°C or below throughout the entire extraction process, not just during a single stage. The objective isn't to increase yield (which ours is reduced by 30%) It's to minimize heat exposure and oxidation so we preserve as much of the olive's natural flavor, aroma and beneficial compounds as possible. To keep it as close to how God wanted for us to have it.

The press is where everything can go wrong or right. You can make an average olive produce great olive oil with the right press! Just as easily you can also make the perfect olive produce the worst tasting olive oil with the wrong press."
