Ultra-Premium, Pure Criollo Cacao from Peru: We’ve carefully sourced the finest ‘ceremonially grade’ Criollo cacao from Vraem, Cusco—ensuring no CCN51 hybrid varietals. As of late September 2024, we’ve transitioned from roasted Ecuadorian cacao to a minimally heated process, preserving higher flavanol content while offering a uniquely smooth, less bitter floral/ fruity taste. The difference? No roasting, a rare Criollo variety, and the distinct terroir of Peruvian soil.
Purity You Can Trust: Every batch is third-party lab tested, free from common allergens, and certified organic, fair trade, vegan, and non-GMO. Our cacao is exceptionally rich—yet with far less bitterness than one might expect.
A Note on Tempering & Usage: Due to its size, this bar may not be fully tempered. You might notice variations in texture, a slight aerated consistency, or a different mouthfeel compared to our smaller bars. That’s why we recommend this bar for melting, baking, or transforming into something extraordinary!
Tips for Handling:
- Before opening: Keep the bar sealed and whack it on the counter to break it into pieces.
- After opening: Use a chef’s knife and chopping board, cutting diagonally for clean portions.
- Shipping note: Due to its size, and the occasional improper treatment by couriers and Canada Post, the chocolate may arrive broken into pieces — but it’s just as delicious and usable!
