Giddy Yo best-seller, we are happy to offer our newly sourced organic Ecuadorian Cacao Powder!
Our cacao powder is made from fermented, lightly-roasted fine flavour Ecuadorian Arriba criollo non-hybrid cacao. The beans are hand-selected, fermented and dried to perfection. The skins are removed from the cacao bean prior to grinding. After grinding, the liquefied cacao mass is transferred to a mechanical press where the majority of cacao butter is removed. The remaining mass (‘cake’) is ground into a fine powder and packaged for your enjoyment. Our cacao does not go through a “Dutch” process nor alkalized in any way. Giddy Yo Cacao Powder has a deep, powerful, chocolate flavour characterized by its blend of earthy and nutty notes,is low temperature processed from start to finish to maximize quality and taste while maintaining nutritional integrity.
Our Ecuadorian partner harvests fully mature ripened pods from trees grown in mineral-rich volcanic soil. They work directly with farmers (aka direct trade) and developed and implemented the Native Cacao Farming Initiative, which is an ongoing free education and training program for the cacao harvesters and processors. It is important to us that the Ecuadorians responsible for creating this amazing food are well taken care of, and it is also our goal to source clean, pure, nutritious cacao of the highest quality possible. We lab test each lot of raw materials to ensure the high standards our customers have come to expect are met or exceeded.
Food safety is of primary importance and we are happy to share with you that our Ecuadorian partner holds the following certifications; Organic, UTZ, Rainforest Alliance, Kosher, Halal, Non-GMO, FSSC 22000 Food Safety System Certified, ISO 9001:2015, GMP, BRC Certified. Further steps have been taken to ensure the cacao is non-irradiated and common allergen-free.
